I came across this one blog called VeganIceCream - some good recipes there but most of the recipes use soy creamer and since I live in a country where some of that stuff is hard to come by I came up with this recipe when I was being creative one day. It's now my most favorite thing to whip up for company :-) Enjoy it again and again!

No eggs and no dairy and it's so easy and delicious!

4 cups coconut milk (not cream)
2 cups peanut butter
1/2 to 1 cup maple syrup (more or less to taste)
1 Tbsp vanilla extract
1/2 tsp ground cinnamon
1/2 tsp ground ginger

Combine in a blender, or food processor fitted with metal blade, and blend until smooth. Then turn on your ice cream maker and pour in the peanutty mixture. Freeze according to manufacturer's instructions. Move frozen - slushy mixture into a freezer safe container and freeze until firm or ready to serve.

Excellent with some chocolate sauce drizzled over the top and some chocolate sprinkles. You could also add in some chopped peanut butter cups or Butterfinger or Snicker's bar just before you store it in the freezer container - and mix in as much as you like.
